WOW'EM WEDNESDAY - ROSE’S CHUNKY CHICKEN CHOWDER



Belt loosening, sleep inducing, comfy-cozy Chowder. 

Straight from Rose’s Galley Kitchen,here's ROSE’S CHUNKY CHICKEN CHOWDER

 

          Ingredients:

·        4 boneless chicken  breast

·        Olive oil

·        Pepper

·        1 cup chopped onion

·        1 tablespoon minced garlic

·        ¼ cup of water

·        A little less than 1/8 cup wine
                                        
·        2 cup broth

·        4 tablespoon of flour

·        1 ½ cup heavy cream

·        1 tablespoon butter

·        Salt

·        4 slices of bacon

·        1 can whole potatoes

·        1 can mixed vegetables
                                                These are just some of the ingredients used.
                                                       Look at that a pretty wine bottle!
Instructions:

1.    Add olive oil, onions, garlic, and pepper to a large pot and sauté.

2.    Cut chicken breast into medium size chunks.

3.    Add chopped chicken breast, water & wine to the large pot.

4.    Cook until chicken is done.

5.    Fry bacon slices and set aside.

6.    In a smaller sauce pan, make your chicken broth, using bouillon cubes, according to instructions.

7.    Add parsley to the chicken broth.

8.    Pour your chicken broth into a small bowl.

9.    Melt butter in the saucepan.

10 Add a small amount of flour, cream and broth (alternating each ingredient) to the butter in the sauce pan. Slowly stir, mixing these ingredients.

11 Slowly pour the cream mix into the large pot containing the chicken.

12 Add canned veggies & potatoes to the large pot.

13 Add a little salt.

14 Simmer for about 10 minutes.

15 Chop the bacon into small pieces and Sprinkle on top of the chowder.

16 Serve hot!

 
Once again, the Smiths were wowed!

Here are some alternatives:

*Milk can be used instead of cream (cream is better though)

*I usually use fresh potatoes and frozen veggies instead of the canned versions.

*You can add the chopped bacon to the top of each individual bowl instead of adding it to the entire pot.

*Try  different veggies – maybe add a little spinach

*Try different meats – shrimp, clams...hmmm…get creative

*Try different seasonings – thyme, cilantro
